Can anyone point me in the direction of an app that can do what I want? I have an Amazon store that sells about 700 SKUs. I want to open a Shopify site for about 250 of those SKUs that are fulfilled using Multichannel Fulfillment with FBA. What I would like is to import those 250 SKUs into Shopify. I would like the app to pull the price and inventory from Amazon periodically. When someone places an order on my Shopify site, I would LIKE for it to automatically generate an order on Amazon, but that is the least critical part of the process. I can do that manually. When I add new SKUs in my Amazon store that I want to sell on Shopify I would like it to be easy to pull those items in. And last, I want to be able to add new SKUs to Shopify that I will fulfill myself, but would be easy to transition to FBA. I also wan the ability to separate variants into different listings. For some reason I have 20 or so SKUs that show up as variants when imported (they're not).
I have looked at 20-25 apps, I can't remember the name of them. I've installed 3-4. Connectr was the only one that actually looked like it would do exactly what I want but I had some issues with the app, then their support was rude, and THEN when I figured out the sync problem it synced and then overwrote 4 days worth of listing edits. I'm incredibly frustrated and about ready to give up on this venture before I even get it off the ground.

I would hit up Codisto and see if they can do what you're asking. That's the app I use to automatically pull in Amazon FBM orders to Shopify. They have a feature I think does what you you want, sync SKUs / prices between Amazon and Shopify.
Other than that, I use Order Automator to automatically fulfill Shopify orders via Amazon FBA. I actually led the development on that app a couple years ago because I wanted that exact solution, now it does some other stuff too.
I don't recommend the Shopify Amazon channel. I've had problems with the syncing with that, and if you search the forums you'll see a lot of similar experiences.
The way I actually do it is create listings in Shopify, then export the data and import into Amazon via spreadsheet, modifying the bullet points to format good for the general Amazon shopper.
For variants to show up as different listings, I like this for Shopify (different listings), but like to combine them on Amazon to help get that extra sales velocity and conversion rate + reviews on a single listing. I'm not sure if Codisto can separate based on rules but give em a shout, I've been using their app for about 4 years now and have had good experiences with help / feature requests.
Codisto uses Shopify as the source of truth for Catalog data (inventory/price/product details). It can create listings on Amazon. Whilst inventory sync is bi-directional, general flow is FROM Shopify TO Amazon not the other way around. Codisto does not create Shopify products FROM Amazon listings (but can link them once the products exist in Shopify).
Codisto's operates such that the ecommerce platform is the 'hub', Amazon (and other channels) are 'spokes'. It is this way so merchants can use the best in class solutions required for their whole tech stack, available on the ecommerce platforms' app stores.

I read about your struggle with syncing Amazon and Shopify, and I've been in a similar boat. Have you tried ClickZyn? It's a free Chrome extension I stumbled upon recently. It's pretty neat for pulling product details from Amazon into Shopify in a CSV format in few seconds. The extension also keeps the product descriptions that save a lot of time. It Might be handy for those 250 SKUs you want (trough CSV(Excel)).
For the real-time price and inventory updates, you'd probably need to play around with Shopify's API. Here's the documentation that could help: Shopify API Docs. You can also replace the previous product with the new extracted product using the chrome extension.
It's a bit of a DIY solution, but it gets the job done.
