Hello, I have the contact information for a "new customer" that has not created an account or placed an order. They have not subscribed to a mailing list, and there was no abandoned cart. In their profile, the only event on the timeline is "Online Store created this customer."
Our site is only set up for Canadian shipping. Our checkout only has the drop-down option for Canada as the country, and we do not have a space to enter a phone number. But this customer account has a full United States address and includes a phone number.
Google Analytics shows this customer only viewed one page - they landed on a product from a search, viewed it for 17 seconds, and left the site again.
How could this information have been collected?
No. We do not have anywhere to enter an address on our contact form.
I'm not sure where you're saying this could be added in shipping. We do not have a field to enter a phone number, and a United States address can't be entered as only a province can be selected, not a state.
I'm having this same issue as well. Dozens of new customers created with information that does not make any sense and no visits to our site.

Looking into this, customer profiles in your Shopify admin can be created automatically due to the following reasons:
1) The customer placed an order on your store.
2) The customer has added items to their cart but has not completed the checkout process. (This would result in an abandoned checkout which can be viewed by navigating to Orders > Abandoned checkouts.)
3) They have signed up or subscribed to your newsletter. This can allow you to collect customer emails for any email marketing you may do in the future.
4) The customer has created an account from the storefront.
5) You have created the customer profile on behalf of the customer, which can be done by importing a customer list.

Would any of those options, or specifically 3 or 4, result in the admin note, "Online Store created this customer"?
Otherwise, I'll be concerned. I recently switched to the newer customer accounts option to stop an influx of spam accounts. And it was working until now...
Not only is it time consuming to check each new account, but I don't want to be automatically sending emails to false or random email addresses which could affect my email deliverability.

With that being said, I encourage you to speak with our live support about this situation by navigating to the Help Center.
When you arrive at the Help Center, you will need to make the virtual assistant aware that you would like to Speak with support and you will be connected accordingly.

With respect, it is a fairly specific follow-up question I asked you that doesn't require me to divulge personal info, and if you are able to answer it, then I will know if it is worth spending the time dealing with further support...as it can be time consuming.
If you do not know the answer, then perhaps someone else does?
