I'm new to shopify and building a one product store using the Dawn theme. The product is a natural skin care treatment and available in a topical onitment, and a liquid spray. Should this be added to the store as a single product with a variant for the onitment or spray. Or two seperate products with a listing for each?

In my opinion, a new store with a limited number of products should split variants into separate products as a short-term approach. However, having a product with two variants on a single page is often more effective and convenient, serving as a better long-term strategy.

How similar besides being liquid vs spray are the two items? If they are nearly identical but just liquid vs ointment, then 2 variants would make sense to me. That said, there might be a benefit for SEO to have two different product pages.

Each method of listing has pros and cons. For a single product listing with variants:
For two product listings:
Personally, I prefer to list a single product with variants; from the customer's point of view, it would be easier to view the product. The only concern you may have is separate types of promotion or managing orders. This problem can be easily solved using some Shopify plugins, like our product label app, where you can add a discount label and badge based on the variant. Our invoice app also shows variant metafields on documents.
