I want to be able to make changes to my checkout page and basket but get the message...

Your Thank you and Order status pages are using incompatible apps and additional scripts, which is deprecated. Replace these with pixels in customer events and with app blocks in the editor, then publish your changes.

I dont want to make any mistakes as it is a busy website with regular orders.
Any advice appreciated.

You need to update your checkout page to remove deprecated scripts and replace them with app blocks and pixels. This ensures compatibility with Shopify's new standards.

I have no idea how much technical effort this would take or cost me as its not something I have time to learn myself?

Shopify take a good $% of all apps and developer assistance sold so it's in their interest, especially when introducing changes like this, to maximise opportunities for increasing their own sales. Those of us that are not sufficiently tech savvy get stung twice - once to pay someone else to migrate to the new checkout, thank you and order status pages, ensuring also that any sales conversion script functions are not lost, and then again in the form of monthly charges for the app(s) required to enhance the customer's checkout and post sales experience.

I'm sure that there are many positives to this new way of working but, for the huge proportion of non-tech Shopify store owners, I suspect this is a worrying innovation that's not explained by Shopify help in terms we can understand.
