I run a clothing store and use Shopify POS to process my sales
My customers pay or alterations at my store, and the payment is then used to pay my local tailor who does the alterations. This means I do not make any money from alterations.
How can I make it so that the alterations that are paid for do not affect my sales figures?
Or if that's not possible, how can I view my sales figures that excludes alterations?

You can add your shop name as a vendor to your products, then use "Retail sales by product vendor" report. I think that should work.
