Yes, that is absolutely legit email. You should pay for a licence, then send 10 puppies and your firstborn child too. 

But for real, if it is a gmail email it can be from anyone. You can create an account and name it shopifytruelegalteam@gmail.com and than send some made up email to those scammers that license is verified already 🙂 There are a lot of scam emails like that and if you use search here or on Google you will find hundreds of topics with 10-15 different scenarios that scammers use. Just to get you to click link or contact them.

So if you check https://help.shopify.com/en/manual/privacy-and-security/account-security/phishing there is an important part:

Recognizing legitimate Shopify emails
Shopify will only send emails from official domains such as @shopify.com, @email.shopify.com, @em.shopify.com, and @shopify-billpay.melio.com. Emails from public email services such as Gmail, Yahoo, Apple mail, or Hotmail aren't from Shopify and should be treated as potential phishing attempts.

So you know that Shopify will never use GMail.
