I opened my shop in July, and have had non-stop emails and Facebook DMs from people wanting to "fix" my site. It's frustrating, how many people want to make money off shop owners who haven't yet made enough money to pay for consultation. Most of the outreach has come from foreign countries, so I suspect many are scams.
The other options are the "Shopify Experts" who know all the secrets, only to be revealed with a paid subscription or course fee.
So, are there any experts out there who help beginners just to see them succeed?
Is mentorship still a thing? If I had all the answers, I'd definitely help startups.

Yeah, a lot of scammers can be found here. As for a community to ask questions regarding Ecommerce with Shopify, you can try Reddit - r/shopify, they are extremely helpful and of course, not out to fish you. Another would be Shopify For Beginners (skool.com), this was once free, but they imposed a monthly fee recently to keep out the scammers. Below is a snippet of the Skool Community:

tl;dr there are more beginners than there are experts, and way more people willing to prey on beginners than experts, don't get sold your own ego be careful paying for "access" to something without real weight.
Contact local business chapters, or look for mastermind groups, avoid marketers or dropship gurus like the plague.

It's a cliche to have this backwards.
The adage it takes money to make money exists for a reason.
You don't know what you don't know and paying for others knowledge works.
Compensate people for improving business value.

Most beginners are a massive drain of resources and time.
As they insist on higher needs that go waaay past any courtesy of just "help".
There are millions of beginner shopify merchants and a limited amount of actual experts.
So if a beginner wants actual effective mentorship it's the beginner that needs to stand out not the expert.
Most merchants seek quick fixes for some immediate issue and are never seen again.
Most merchants fail, the amount of merchants that don't fail and come back and actually contribute anything of value miniscule.
The amount of return help is low so much that saying "just to see them succeed" is nearly a joke, it's similar to the narcistic "i'll pay you in exposure".
For anyone with deep expertise it's redflag of a brain drain to be avoided.
⚠️💣 Compounded this is why there are lots of "expertise" communities/workshops/mindshares/discourse-channels etc where in the end beginners primarily only get access to other beginners who are also paying to be there to have access to beginners...
With very few experts making appearances, or more importantly actual real results and improved outcomes happening.
