Is there a way to only tax a specific part of a product? For example, we sell a product for $60 but there is a $100 donation on top of that product. So, technically the price of the product is $160. Is there any way we can tax the $60 but not the $100 and show both as line items?

You can try to do the tax overrides for the products that you like to have this tax rule. First, you will need to create a collection for all the products that you will add tax exception. For detailed instruction, kindly check Tax overrides and exemptions website.
