I sell some products on consignment in a few different shops. What would be the best way to track those items and then record the sales? The shops send me a check at the end of the month less their commission. They take care of sales tax so I don't have to worry about that.

Creating a draft order would be the simplest and best way to track those consignment sales. You can reserve the number of products you leave with the store and set the payment to be due later. Reserving products puts them in the Unavailable inventory state, making them unpurchasable by other customers. When the shop sends you a check at the end of the month, you can go back to the draft order, edit the quantity of products sold and mark the order as paid. Since they deduct a commission, you can apply a corresponding discount to the order.

There is a good solution in this post.
Essentially, you create locations for each of the shops you sell through, then use the POS app to reduce inventory from those locations you you make a sale on consignment.
