I'm purchasing a business that has an existing Shopify account. I want to set up a new Shopify account using their current website, but I want to build the customer database, inventory, etc. myself rather than importing theirs. Is this possible? If so, how is it done?

It makes no sense though, because the whole purpose of buying an existing store is that it has matured on Google indexing - saving you potentially a year on time. Although Google indexes within two weeks, the site remains in a sort of "back of the q" algorithm until it matures and gives poor search results.
You do the changes in the store you have purchased.
