Unable to find the sorting option on the Shopify

Hi I have a client of mine whose website it built on shopify.  I've to sort the products into specific category like jewelry watches for men and for women seperately. But I'm unable to find a way to do so with automatic sorting function. Do I need to put specific tags on each product so that I have to place them in the specific place?

I am not sure about this since I haven't done this yet but you might have to make collection. 

So a collection for mens watches and inside that collection include all products for mens watches. I believe Shopify will give an option automatically to sort from collection.

Actually there has to be new collection which contain products that are watches and contain word gold or diamond in their names.  I've tried to do so but if I select all products with word watches then There's no option to select gold or diamond so I can sort. The problem is that client has multiple products and categories (https://thebackvault.com/) ranging from jewelry to watches. And jewelry has many sub-categories too

Then you should create collection naming gold watches, or silver whatever the need and add products inside that collection accordingly

I've to create a collection for jewelry watches and it consist of both gold and diamond watches. Right now I'm going with adding add tags to each watch product. But it's time consuming that's why I asked that if there's some quick alternative

I will admit i am not very good with these manual stuffs i am more into code, but can you not make different sub collections for gold and diamond under jewellery watches?
