surely this has been mentioned but was unable to find a post with the exact issue - and don't know if it's bug or a gap!
a common view of from the Products list I want is :
Sort by: Created
Order: Newest First
As we get new products created in draft all the time, and I want to find these with a single click ideally by a 'View'. This does not seem possible at the moment.
Is this possible to save/configure via Shopify standard interface without having to click the sort button each time I want to see it?

You can change sort by newest in Store admin > Products > Collections > edit Collections > select sort by default option and save collection

Yes, it is possible to save the "Sort by Created" and "Order: Newest First" filters as a view in Shopify. Here are the steps to do it:
Go to your Products page in your Shopify admin panel.
Click on the "Filter" button to bring up the filter options.
Select "Created" from the "Sort" dropdown menu.
Select "Newest First" from the "Order" dropdown menu.
Click on the "Save" button next to the "Filter" button.
Enter a name for your view in the "View name" field, such as "Newest Products".
Select the checkbox next to "Save this view for everyone" if you want this view to be available to all staff members.
Click on the "Save" button.
Your new view will now be available in the "Views" dropdown menu, which is located next to the "Filter" button. You can click on this view anytime to see the latest products that have been created.
