Unused shipping labels and LTL shipping .....

At times we will need to ship large orders LTL.
Is there a way to accept a payment but still ship LTL instead of our usual carriers?
If say a UPS label is not used how do you void a label but still accept payment from the customer? 

I know how to void a label but that makes the order revert back to being unpaid and unfulfilled.

Also, 
If you purchase a label and don't ever use it are you still charged those shipping costs?
