What's the best way to organize my store with "Product Type" & "Collections" ?

Hello All,  Can anyone provide advice on the best way to organize my shopify store?  I sell motorcycle stuff. Categories like ATV, Cruiser, Dirt Bike, Sport Bike.  I have helmets, boots, jerseys, & all in different brands.

When it comes to categories, "product type" I'm not sure if it's best to put the Brand (HJC helmets), the style (full Face Helmet) or something more broad like "Motorcycle Helmets"

Same goes for collections. The bottom line is this, i don't want to find out 6 months down the line that there was major drawback from how i decided to organize. Thoughts?

Unfortunately that does not help as the question is about the nuanced differences in "product type" "collections" and "tags".
