Why is my inventory not reducing after order fulfillment?

I have each of my products set with an Available Quantity and On Hand of 1 because most of my items are one-of-a-kind. A customer just order 1 of an item, but the quantity did not reduce even once I fulfilled the order. It still is showing that 1 is available. WHY?
