Can you link to the page on your site, and then provide a screenshot of how you've set up the page?

Just based on your screenshots, I'm assuming that this is content that's been created through the rich text editor, instead of via the theme's 'customize' settings.

If this is just a regular page, that you've created with the rich text editor, then it's likely that the text you used is coloured within the rich text editor, which would override any theme settings. I'm not sure why your image is shaded though.

If you can provide a link to the page, it'll help with troubleshooting what the issue is.

This would be a theme colour setting then.

Look at your other 'colour schemes' (not just colour scheme 1), and see if any are using grey as their "text" colour.

If all of your colour settings for "text" (within all of your different colour schemes) are already set to white, then it's must be some coding that you've added to the theme that's messing with the font colours (which I wouldn't be able to help with, without having access to your store).

When I inspect your page via Google chrome, it shows that the main div surrounding your grey text has a CSS element applied to it for 0.7 opacity.

This is probably what's responsible for your white text appearing grey. I'm guessing you made some coding edits that effected more of the site than you intended them to.

You could try going into your theme's CSS file, searching for "opacity: .7" and seeing if you can find the line of coding for this, and then edit/delete it.

Otherwise, your best bet would be hiring a Shopify Partner that specializes in theme customizations to help fix things (so that your colour schemes work correctly): https://www.shopify.com/partners/directory/services/store-setup/customize-theme
