How do I sell face to face workshops on my website.? Is it classed as a digital product?
I would like to be able to sell different workshops and well as live digital.
If anyone has any advice I would be grateful

Ya I would definitely class it as a digital product. You can create multiple digital products and maybe just differentiate them either by adding a unique title like this: Workshop(In-person) and Workshop(Online).
You can also give those product tags so if you want to create different collections of workshops its easy to do in the future.
Yes, generally this in the category of booking services, or courses.
Which if a schedule and or reservations are involved you will want to use a booking app to facilitate as shopify is a physical goods platform first, so features for services-centric products are shoehorned in.
If doing education also look into apps, external services for LMS, Learning Management Systems.
If doing virtual meetings/screenshare also look into apps/services for webcasting/webinar/video-course.

If the dates AND times are set and not variable then yes this could be done without apps.
Literally just make the data&time options on the product itself, and set inventory for the variants.
In almost all themes this method options will will just show as either buttons or dropdowns and not a calendar.
In this approach it's the managing products on a schedule and things like reminding customers via email, or notifications that an app would generally be needed.
Though you could setup shopify-flow to email YOU with a template that you then copy&paste or forward to clients, and it can also set the status of products on a schedule.
And there is also iCal formats , i.e. google-calendar, etc where you create special links that can autofill a customers calendar when they click it.

Any item which is not available physically will lies in digital products.
For workshop I don't think you need any booking app, just create product with date wise.
Whenever a user will book your workshop he will be entitled for that day only.
