You can find our Shopify Flow documentation here. We do touch on the different order triggers in this guide where particular triggers are defined, although it doesn't explicitly outline the definitions of each.
For your example, however, "order created" refers to when an order is created which includes clicking the Create order button through a draft order creation. Because with draft orders, you may not accept payment upon its creation, there is a separate trigger for "order paid".
