Rotating the availabilities of products in a collection automatically on a scheduled time

I have a collection that contains 6 products. These products are sandwiches that I am selling. Every week I only want 1 of these 6 sandwiches to be available for sale, so I would like to automatically rotate this every Sunday morning. I am trying to create a flow that adds the "available" tag to the next product in the collection and adds the "unavailable tag" to all the other products in the collection. Additionally, I would like the flow to set the inventory to the available product to 22, and the inventory of all the unavailable products to 0.

I've been struggling a lot with this but I can't manage to figure it out. I would be really grateful If somebody could help me in the right direction.

Not sure how you would determine the "next" product in a collection. What do you mean by that?
