Shopify Flow is an ecommerce automation platform that enables you to automate tasks and processes within your store and across your apps.
I'm trying to use Flow to automate to hide out-of-stock products without variants, and show them back when there's positive inventory levels.Can someone help me with creating this flow, please?
I'd be happy to change my collections from manual to automated to "solve" this problem, but I'm using an headless version of Shopify integrated with WebFlow, so it's more difficult to do it.

The Flow team doesn't outright build workflow for people, but there are many templates available showing how to do out of stock notifications through Flow.
If you want paid help, you might want to clarify that here, as there are partners on the forums who know Flow well.

OK, you'll have better luck asking if you can get a bit further and know more details about your specific needs (because inventory is multi-layered by product, variant, location and type of inventory, there is no one-size-fits-all solution).
