Funnel all users through checkout button but retain accelerated checkout options

This is kind of a two part question.


I've come to find that there is no way of tracking begin checkouts when a user clicks on dynamic checkout buttons on my product pages. So I've decided to remove them and just have a single "Add to Cart" button. However, it seems these options are still available in the cart page.


1. Is there any way of removing them from here in a way that will still allow them to be used from inside the checkout? I would like to maximise conversion tracking but realise the benefit of having these accelerated checkout options available to the customer.


2. What would be even better is if I could somehow query the accelerated checkout options available to the user and have them display beneath the "Add to Cart" and "Check out" buttons. So the user is aware these options will be available when they reach checkout.
