How can I show all stores directly in my theme's availability modal?

Hi everyone !
I'm building a theme with a store availability modal. It displays the stock of products by store.
The problem is that it only shows me the store where the product is available and not where it is not available and I found the problem, I have to add stock in one of my stores and remove it .
And I don't want to do that for the whole product. How can I display all stores directly ?
