Show stock levels on Fresh theme (with variants)

I'd like to show stock levels in the Fresh theme - note, I have some products with variants (they're the problem). Most of my products are unlimited inventory, made to order, but some are ready to ship and need the quantities controlling. I hate that customers can't see how many are available until they try to add too many to their cart, so I've removed the RTS items until I've fixed this.

I have tried a few different code edits, one of which got really close, but it didn't change the quantity available for each variant unless you refreshed the page after selecting a new variant.

I was using the Stock Level app previously, but I don't like the way it shows things now (it looks very different on my new Fresh theme, compared to when I was using Simple). My next option if I can't get the coding right is to add in the code I found which will show a valid stock level if there aren't any variants on the listing, and then just create a new listing for each RTS variant (time consuming and I'd rather just get it right and working off the bat, as I'll have to do new photos for everything to just show one variant).

I'm very comfortable (too comfortable) faffing in code, but I don't have much coding experience. Open to trying mostly anything that's thrown at me, as long as I can figure out where to put it.
