Does anyone have any currently working options for moving the absolute dogs breakfast that is "content_for_header" to the end of the body tag?

This is an accepted solution.

You can use {% capture header_content%}content_for_header{% endcapture %} then put header_content at the bottom of the body.

However, be ready for unexpected results depending on what apps and features you have.

I am SOOO glad my first reply wasn't "use {{this}} app" I would have probably gone postal.

I appreciate your help!
