I've implemented some changes that were suggested here and would like some more input on how my site looks now. I am also wondering how to remove the VAT and trade number from my contact info page...

That contact information page is your policy page, just go to the policy page from your list of pages. and remove the contact information, as I did for you, please review the screenshot.

6. Domain name
Currently, you are using the default “ myshopify.com” subdomain. It may lower brand awareness among markets.
You must acquire a custom domain to maintain and strengthen your online presence.Using a domain that matches your brand can help you build trust in your online store.
