I am ready to launch my shop except my email won’t work. I put in my new email address and when I test out the “contact us” nothing ever reaches me. Also, I’ve been testing out the subscribe button and nothing. Please help so I can open this shop up.

The contact us form will send to the email address that is set in your notifications settings (not your store email).
Admin Settings > Notifications
