Creating custom checkout

We are developing a new public app to be able to interact with a Third Party system.

Currently, we are able to get the products from the cart via rest call to /carts.js, and we are able to create a custom checkout calling StoreFront API, and the question is:

Is there a way to know when the default checkout creation call is done, add our code (js code), and redirect to the new custom checkout url created? We are trying to use jQuery to get the submit event of the form, but the button "buy now" has a default event listener that we cannot remove to add our handler, and not sure if this is the way to do it.
