GDPR and checkout on custom Storefront

Hi,

How would you implement a GDPR consent prompt running on your frontend on the checkout hosted by Shopify ?
It seems there is no way to stop Analytics and Ad tracking to run, depending on user specific consent. On setting I have found is regarding this at the Shop level.

Did I miss something ?
Otherwise it would be impossible to be GDPR compliant on the checkout, I guess.
