Adding a custom textfield and quantity question

I have 3 products which has 4 colours each, it's a custom tote where they can pick what colour the bag is but is there a way to say there are only 4 red bags across the 3 products? Or is it better to set it up so my colours are the product then they pick what's inside with the varients?

I'd also like to add a textarea where I want to ask questions on what they would like to customise, ask them questions to help me create their tote bag. Can I do this without having to pay an additional $12pm for app addon?
