Back up image and text data

Can I back up my photo and text data if I no longer use shopify's service?

When I have a new website, how can I reuse those images and text?

What is your text? is it product content or something else?

If that is content from product data, you can export your product data to CSV file, it will include the product description and product media like images, please check this article

If they are content from the theme, you can also export your theme, check this article
