After adding Shopify Payments the 'Buy it now' button underneath 'Add to cart' button was replaced with a 'Buy with GPay' button.
I dont want this. I just want it to look like it did before:
how do I get this button back?

I did some additional digging into your question and found some information. It looks like this button is a 'dynamic checkout button', and this behaviour of automatically switching to show a payment gateway is automatic, based on a customer's location, and cannot be changed or customized natively.
As a result of the info above, it looks like we've received quite a good amount of feedback regarding this over time, and our Developers are still looking for more examples of feedback, and requests for this feature to be something that can be changed. I've gone ahead and passed along your request for your ability to change this button to the Team as another example of this feedback. Though I can't promise what the outcome of the feedback may be, you can trust that it will be seen by the appropriate individuals.

It looks like you're using a Shopify made theme, so what you've experienced here with your 'Buy Now' button is expected behaviour once you've connected Shopify Payments to your store. This is because accelerated checkout options, like Google Pay, are very commonly used by customers to complete their purchases, and help customers complete purchases with fewer clicks!
If you're looking to revert this button back to it's original state, what I suggest you do is reach out to our Authenticated Support Team via our Help Center. You can use this link to access our Help Center, and let our AI Chat Assistant know about your request to revert this change. The Team will be able to get in touch with our Theme Specialists to see what options are available to them to assist you with this request.
Of course, another Shopify user may stop by with some coding to help you revert this change, but if that doesn't occur, please use the steps I provided above.
