How can we have copyrighted information that was stolen from us and used on a shopify website taken down?

Log, record ,and archive backup every interaction either with the suspect site , or the platforms involved.
If you have a lawyer have them send the paperwork versions of any online forms.
Also inspect the suspect site for any other involved external hosting services (such as images servers, CDNs, static content, etc) and target those platforms as well.

I had the same problem. A scammy site was using the same url except it ended is .shop instead of .com. They stolen photos and content to create a copy cat site but was scamming people, not fulfilling orders and making unauthorized credit card transactions. I emailed the only contact info on the site and the hosting site a Notice of Cease and Desist. I also was able to file a complaint to the host on their website. Now the site is down. You can go further and file a complaint if the domain is being abused and not following the rules of ICANN to have the domain taken away with https://amc.wipo.int/ but it costs $1500.
