Really great question! The best and most proficient way to gather data and count clicks to certain links would be via Google Analytics. Shopify does have it's own analytics, but for more in depth detail such as what you're looking for, Google Analytics will probably work better.
Something to note is that there can be some discrepencies between the analytics of the two platforms but there are many factors which go into why this might occur. You can find out more about that in the help guide Shopify has for analytics discrepencies here.
