Create a new product with multiple variants and delete the older single variant products

I have 2 single variant products (example: Aloha Tee White and Aloha Tee Black)

Both products have their own SKU and Barcode for each size (S/M/L/XL/XXL)

Now I create a new product called Aloha Tee that not only has the variant of Size but also the variant of color

When I create the new product I keep the same unique SKU and barcode for each color/size product

Now I want to delete the old single variant products

My concern is what will happen with all the sale history of those products

Are there going to continue on the database as the new product keeps the same SKU and Barcode or are they going to be delete
