Google Merchant Center doesn't allow manual setup of delivery times once it's connected to the Shopify product feed through its API.
Our products show up on Google with "Free Delivery By - Date X". Date X is 3 weeks in the future, which doesn't even get close to our shipping times. Worst case scenario it's 7 business days (1 day fulfilment, 6 business days delivery, usually below 3!).
We tried to set custom shipping rates instead of the preset shipping rates from shopify that come with a delivery estimate (Express 1-4 days, Standard 2-8 days). Custom shipping rates come with "no transit time". It didn't help and Google still displays the wrong delivery date.
It seems the only way is to hard code shipping times to our products and submit it through the product feed. Anyone had the same issue and got it solved?

That is incorrect. You can setup manual shipping times, simply disable the automatic shipping import in the Google and Youtube app, once done.
You can edit GMC shipping settings or pause the existing one and create a new one.
However, if you mean the delivery time in the shopping ads or free listings, that is a different story. These are estimated based on a combination of your data and AI. So to have Google show more accurate shipping estimates in ads or free listings, you need to submit shipping verification data. More info: https://support.google.com/merchants/answer/10834831?hl=en

Google has made a change if you are using the google and youtube app, you can no longer manually edit the shipping settings even if you set it to manual.
