Desperate need to turn on/off sales channels via the API

We use the REST Admin API to create new products for our store (we add hundreds of new products this way each month). However, the new products that get created are always defaulted to ONLY being available via the "Online Store" sales channel. We need the ability to turn on the other sales channels for these new products via the API because it has been tediously awful having to go to the Shopify website and manually modify the sales channels for each new product by hand.

We see that this mechanism might exist via the GraphQL Admin API here: https://shopify.dev/docs/api/admin-graphql/2023-04/mutations/publishablePublish

However, we've been told that that endpoint is only available to Shopify Plus subscribers. Is that definitely true?

If so, what do we need to do to open up access to that endpoint for the rest of us stores who are still small enough to not need all the bells and whistles of Shopify Plus?
