A small number of my products have the error message missing field "image" on Google Search Console.
All impacted products (20 in total) do have an image present in the product listing in Shopify store. To my knowledge, I am not doing anything different with my other products which appear to be fine.
I can't find any info. via Google support to fix this issue.
Any guidance would be greatly appreciated.

me too. Turbo theme. really disappointed to not find a resolution to this issue after 5 months from the original post.
I'd look to see if you have images on all your variants. If you don't, try adding one, and then running your page through both of these tools: https://developers.google.com/search/docs/appearance/structured-data
Slightly oversimplified, but the first one is the google specific validator, and the second one is for any search engine.
I just updated a store's product that had the same error and it worked!

If you haven't already, update your theme (Dawn) as this was fixed in a recent update).
For others who are still experiencing the missing field "image", you'll want to talk with your theme provider to have them fix it or install a structured data app that is more reliable in ensuring the structured data stays up to date. Themes are notorious for taking months to fix their structured data and the missing image could cause you to lose your Rich Results.
