How can I change the sorting categories on my product pages?

Hi 

I would like to change the sorting categories for my product pages. Right now you can sort alphabetically, according to price, best selling, date, etc. I find most of these categories useless, but don't seem to be able to change these anywhere. 

Can somebody help please?
