How can I correctly set up canonical tags for multiple markets?

We sell to multiple markets using the subfolder setup for country and language:

 

/products/example (Primary market in English)

/de/products/example (Primary market in German)

/en-us/products/example (English version for US market)

/de-us/products/example (German version for US market)

/de-de/products/example (German version for German market)

/en-de/products/example (English version for German market)

etc...

 

Every page has a self-referential canonical tag, which only makes sense for the original page. The country variants should refer to the original page of the primary market. If every variant page refers to itself Google will find a lot of duplicate content and does not know which one is the original page.

 

Why is shopify not managing this correctly and how can I make it work?
