How can I create a customizable chopping board product in my online store?

Hi there
I am starting a business selling chopping boards

each chopping board will be made-to-order

A chopping board will consist of 10 strips of wood and the buyer can choose the type of wood for each strip

Each type of wood will have a different cost associated to it

Based on this I have a few questions

1. Is it possible to set up this kind of product in Shopify

2. I wish to create a 'chopping-board-creator' for the product page to allow the buyer to easily select the types of wood they want, is it possible to use a standard shopify website but provide custom html/javascript for the product page or would I have to create my own website and integrate with the shopify APIs.

Finally, do you start paying for shopify as soon as you create an account or is it not until you launch your shop?
