How can I customize the checkout process on Shopify?

Dears,

We have 3 stores that are created using Shopify, but we are facing an issue that we hope can be solved soon in Shopify, the issue is that we need to have some customization on the Checkout level, in which we can install a currency converter and keep the same currency selected at checkout and don't revert back to the primary currency.

Also, we need to add some additional fields to the checkout such as a list of cities instead of asking the customer to add them Manually.

Having said that we ask you to keep us updated in case you might change anything related to the checkout limitations and other limitations across the platform, same as Woocommerce gives the full freedom for customers to modify every single section across it.
