How can I customize the Shopify delivery date picker?

I wanted to chat with someone who can help me customise the default delivery date picker HTML that Shopify offers.

What we need altered is:
- For the date to read in the Australian format (dd/mm/yyyy)
- For next day availability to become unavailable after a certain time (4.00pm AEST)
- To make weekends unavailable, but an option for us to make SOME weekends available.

That is using the jquery UI datepicker and it's documentation is here https://api.jqueryui.com/datepicker/  

Loose information on where to start.

1. For the date to read in the Australian format (dd/mm/yyyy) , $.datepicker.formatDate
2. For next day availability to become unavailable after a certain time (4.00pm AEST) , bit more complicated see stackoverflow sample

Nice to see a fellow Aussie here! I'm one of the developers of a delivery date app called Bloom which has options for exactly what you're asking. You can change the date format to DD/MM/YYYY, set cut-off times for next-day delivery and blockout specific days/dates, plus a bunch more.
