How can I display all products on one page?

I've been reading threads for 2 hours trying to find a solution. I've adjusted the number of products per page, nothing changes. I've gone into the code and tried to solve the problem there. I've tried 3 different themes, it's happening across the board. I go into one of the collections and it says "12 of 39 products" then there's nowhere to find the rest of the products. In another collection it says "5 of 6 products." I'm so frustrated I could barf. Anybody else have this experience?

None of the collections are showing the proper number of products. 

When I'm on my admin dashboard, the collections all show the correct numbers:
