How can I limit product availability for a specific future date?

How do I restrict product availability for a specific future date, but maintain availability of that product and every other product for every other day?
The Online Store schedule availability option does not work for my need, because it schedule a specific date when your product will be available, but in the meantime, the product is not available for sale.
In other words, I want all the products of my store to be "unavailable" for Mother's Day season but available to be delivered before and after that day, and I want to select ONLY A RESTRICTED SET OF PRODUCTS to be available during Mother's Day.

Hide the payment button by default and create metafield of type date and check the range.

Which will enable the buttons.
