How can I schedule item availability without it disappearing from the store front?

Hi.

Is there a way to schedule an items availability without the product disappearing from the store front?

We have several "hot" items that sell out in batches really quickly but other items that are slow burners, we currently close the entire store whilst we fulfill the orders on popular items.

We'd like to set up so the hot items have set availability times and dates but not have the page disappear with a divert to a 404 message.
