How can I set up more product variants than allowed on Shopify?

I have products have more variants than Shopify allows. For example if I sell a “kit” i want people to select the fragrance they want for each item such as the candle, spray, and aroma bag. How do I set that up if Shopify only allows 100 variants and I have a ton of scents?
