Let's say that we have a limited release (10) of a product, and on selling out we want to make the page look as if there is 1 product left to buy.
When the customer has input all their shipping information, delivery, etc. and click confirm the order, we can then redirect them and tell them that the product is sold out and that their order did not go through in order to track the total number of potential buyers > 10.
Is this possible? And if so, how would I go about implementing this to my storefront?
I'm not sure to understand the point of this. Will it not waste buyer's time?
What you can do is cancel an order directly in your backoffice. So once an order is passed, you can cancel it and refund the buyer, he will receive an email to be made aware of that ; I suppose you should check with your payment provider if that's not going to be an issue to refund like that, it's not common practice I guess.
You could automate this with Shopify Flow if you have Shopify Plan or higher.
main idea is to track total interest even with limited projects so we can properly scale future collections
