I've attached a photo, as you can see there is plenty of room for the description table to be large but for some reason it requires the person to scroll. This is only the case for some products as others fill up the whole description with no scrolling option. Is there any way to fix this?

You can try this code by following these steps:
Step 1: Go to Online Store->Theme->Edit code.
Step 2: Search file theme.liquid
Step 3: Paste the below code at the bottom of the file -> Save
<style>
[data-product-description] table{
width:unset !important;
height:unset !important;
}
</style>
