I've added a bunch of products and listed how many we have of each item, but when people are on the site, they're able to add more than what's available to their cart.
For example, if I have zero of something, it correctly says SOLD OUT. But if an item has 1 (ore more) available, people are able to add any number they choose to the cart.
I've turned OFF "continue selling when out of stock" and turned ON "track inventory."
THIS IS DRIVING ME CRAZY! Can somebody please help me?!

This can be done using custom dev in your theme, where we will read the inventory of that product and write script which will check the inventory value with user value.
Adding the quantity will reset the value with quantity product have and alert the user for same.
