I need to add a note section within the product tab that is not searchable to a customer.

Since I work for a jeweler and some of our inventory is purchased from a third party, I want a couple fields added to the product tab that tells me who I purchased the product from, what the part number is and date purchased.

Just to gather some additional context, are you wanting these fields to be added to the product page of the online store? Or, are you referring to adding these fields to the Shopify dashboard? I am just trying to get a better understanding of this so I can assist you accordingly.

I want to add them to the online store; where you enter your product to be shown in your online store. So they’d be hidden fields (from the customer).

Thanks for clarifying that. Information for the online store will be visible to customers. There isn't a way that I'm aware of to hide information that is published on the online store. What we would recommend is adding this information in the Shopify admin. 

When you add or edit a product, you can use the Product organization and Product metafields sections of the product details page to include who you purchased from (Vendor), part number, and date purchased. Your theme settings may include an option to determine whether the Vendor is visible on the Online Store, or whether it is only for your eyes in the admin.
